Relaxing at Red Hall Hotel: A Luxurious Night Away with Mediterranean Dining at Melange

After a stressful start to the week, I was offered the chance for a night away and a lovely meal — and I jumped at it.

We made our way to the Red Hall Hotel, nestled at the foot of the Pennines. Its idyllic location offers the best of both worlds: just a stone’s throw from Manchester, yet surrounded by the peace and tranquillity of England’s backbone.

Upon arrival, we were warmly welcomed in the light and airy reception by Helio, the hotel’s manager. You couldn’t ask for a more helpful host. The hotel has recently undergone extensive refurbishment, both in the rooms and the restaurant.

We were fortunate to be booked into the Princess Suite — complete with a king-size bed, double bath, and his-and-hers showers and sinks. I cannot recommend this room highly enough.

After unpacking and unwinding in our luxurious suite, we headed downstairs to the restaurant, Melange — the main reason for our visit. Like the rest of the hotel, Melange has been beautifully refurbished. It’s bright, open, and carries a distinct Mediterranean atmosphere that echoes its menu.

The menu is the creation of head chef Jason Lund. At just 32, Jason secured his first head chef role at only 21 with Lavender Hotels — a remarkable achievement. It’s easy to see why. Drawing on the team’s varied backgrounds and Mediterranean home-cooking inspirations, Melange has crafted a vibrant fusion menu that celebrates both flavour and culture.

We were looked after by Nas, the restaurant supervisor, who has been with Melange for ten years and knows the menu inside out. I asked if the chef could prepare his favourite fish dish, as James — another team member — is known for his love of cooking seafood. After a generous and delicious charcuterie and cheese sharing platter, I was delighted to be served my favourite: sea bass. It was cooked to perfection and presented on a bed of fresh greens and pea purée. My wife chose the sirloin steak, which was equally well-prepared and beautifully plated.

To elevate the experience, Melange recommends a wine pairing for every dish on the menu — a thoughtful touch that helps ensure a perfect meal.

Then came dessert. I opted for the Crème Brûlée Mediterranea and an expertly mixed espresso martini by restaurant manager James. That didn’t stop me eyeing my wife’s dessert — Cioccolate e Amore — a rich dark chocolate cheesecake infused with orange zest. Irresistible.

Melange is an ideal venue for any occasion — from weddings and Sunday lunches to afternoon teas. The menu is exciting, the flavours are exceptional, and the presentation is impeccable. With a special “Date Night” menu available on the last Friday of every month, you don’t need a wedding to enjoy a romantic evening with your partner. I highly recommend it.
