  1. Rub butter into flour and sugar until crumb-like. Add yolk + ice water; bring into a dough. Chill 30 mins.
  2. Toss apples with sugar, spices, vanilla, flour (and Calvados if using).
  3. Roll pastry and line a pie dish. Fill with apples, top with pastry lid, crimp edges.
  4. Brush with egg, sprinkle demerara.

Ingredients

Filling

  • 400g frozen dark sweet cherries
  • 200g mixed berries (frozen is fine)
  • 100g caster sugar
  • 2 tbsp cornflour
  • 2 tbsp kirsch (optional)
  • 100g dark chocolate, roughly chopped

Method

  1. Simmer cherries + berries with sugar until soft (5 mins).
  2. Stir in cornflour paste (2 tbsp cold water + cornflour) and thicken. Add kirsch. Cool.
  3. Line dish with pastry, fill with berry mixture and chocolate.
  4. Add pastry top or lattice; chill 20 mins.
  5. Bake 190°C (170 fan) 40–45 mins until golden and bubbling.

Serve with softly whipped cream.

Pear, Ginger & Almond Crumble-Top Pie

Ingredients

Pastry

Filling

  • 5 ripe pears, sliced
  • 2 balls stem ginger, finely chopped
  • 1 tbsp ginger syrup (from jar)
  • 80g caster sugar
  • 10g butter
  • 1 tbsp flour

Crumble Topping

  • 100g flour
  • 60g butter
  • 60g brown sugar
  • 40g ground almonds

Method

  1. Gently cook pears, ginger, syrup, sugar + butter until softened. Stir in flour, cool.
  2. Fill pastry-lined tin.
  3. Rub crumble ingredients together and scatter thickly on top.
  4. Bake 180°C (160 fan) for 40–45 mins.

Finish with salted caramel sauce.

Sticky Toffee Pudding Pie

Filling

  • 200g pitted dates, chopped
  • 200ml boiling water
  • ½ tsp bicarb of soda
  • 80g butter
  • 80g soft dark sugar
  • 2 eggs
  • 1 tsp vanilla
  • 100g plain flour
  • Pinch of salt

Toffee Sauce

  • 150g butter
  • 150g dark soft sugar
  • 300ml double cream

Method

  1. Steep dates in boiling water + bicarb 10 mins, mash.
  2. Cream butter + sugar; add eggs, vanilla, flour, salt. Fold in dates.
  3. Pour into pastry case and bake 170°C fan for 40 mins.
  4. Simmer sauce ingredients until glossy and thick.
  5. Pour a layer of sauce over warm pie.

Serve with cream or custard.

Mulled Winter Berry Lattice Pie

Ingredients

Filling

  • 500g mixed frozen berries
  • 100g sugar
  • Zest 1 orange
  • 1 cinnamon stick
  • 1 star anise
  • Splash red wine or cranberry juice

Method

  1. Heat berries, sugar, zest, spices + wine for 5 mins.
