The Banksia Restaurant: A Bold New Dining Experience

Set to open its doors on Tuesday 15th July, The Banksia bar and restaurant is bringing a bold new energy to the local dining scene. With its vibrant menu of Mediterranean flavours, locally sourced produce, and theatrical touches, this is one spot that promises more than just a meal – it’s an experience.

Big Flavours, Small Plates

At the heart of The Banksia is a small plates concept designed for sharing. Think Beef Brisket Pachanga, King Scallops, and Hummus Kavurma, all bursting with colour and crafted to spark conversation. Whether it’s a romantic date night, a celebratory dinner with friends, or a business lunch to impress, this menu has you covered.

And true to its name – inspired by the Banksia plant and its fiery transformation – elements of smoke and flame weave their way through both the food and drinks menus for an added wow factor.

A Menu Made to Impress

Split into four sections – Seafood, Meat, Soil and Grill – the All-Day Menu balances Mediterranean staples with unique showstoppers. For the perfect table-side spectacle, order the signature Banksia Hummus, prepared fresh in front of guests.

Those with a sweet tooth are in for a treat too:

  • Lokma – spiced doughnuts drenched in honey and pistachios.
  • Citrus Cheesecake – delicately flavoured with rose syrup and almond crumble.
  • Plus Mediterranean classics like Baklava and Traditional Tiramisu.

Cocktails That Turn Heads

The Banksia isn’t just about food. The bar menu is equally impressive, offering cocktails and mocktails to suit every mood. Highlights include the flirty Date Night, smoky Ale Fashioned, and floral Violet Delight.

For a playful twist on a classic, try the Cosmopolitan Selection – four reimagined takes on the iconic cocktail.

Brunch, But Better

Lazy weekends call for brunch, and The Banksia delivers. Savoury stars like Turkish Eggs and Chickpea Fritters sit alongside sweet temptations such as Buttermilk Lemon Ricotta Pancakes with orange compote and candied pistachios. For a lighter option? The pastry selection is ideal for dining in or grabbing on the go.

A Culinary Labour of Love

Head Chef Craig Rogan shares:

“Mediterranean cuisine is one of my favourites. Bringing together flavours I love with local ingredients has been so rewarding. We’ve created more than just dishes – it’s a full sensory experience. If I had to pick a few must-try items, I’d say the Hummus Kavurma, Lokma, and our Banksia Salad, which is no ordinary salad!”

As the opening date nears, excitement is building. The Banksia isn’t just somewhere to eat – it’s set to become the go-to spot for food lovers and cocktail fans alike.
