I’m no baker. In fact, I’d go as far as saying baking and I simply don’t get along. It’s all a bit too scientific for me, and I definitely don’t have the patience to measure everything with military precision or worry whether I’ve folded, whisked or sieved something correctly.

That said, I do enjoy a good dessert every now and then.

More often than not, I’ll reach for something shop-bought because it’s quick and easy. But lately I’ve been trying to pay a bit more attention to what I’m eating, and some of the ingredients lists on pre-made desserts genuinely leave me scratching my head. Half the preservatives sound like they belong in a chemistry lab rather than something I’m about to eat.

So I decided to find a dessert that was ridiculously easy to make, satisfied a sweet tooth and didn’t involve a degree in baking.

Now, while I’d usually choose a cheeseboard over pudding, there’s one other cheese I can never resist—the kind that ends in cake.

So, if you’re anything like me, here’s the easiest cheesecake recipe in the world. No baking. No complicated techniques. Just a handful of ingredients, a little bit of chilling time and a seriously delicious dessert.

Serves: 8–10
Prep time: 20 minutes
Chilling time: 4 hours (or overnight if you can wait!)

Ingredients

For the base

  • 250g digestive biscuits
  • 100g unsalted butter, melted

For the cheesecake filling

  • 600g full-fat cream cheese
  • 100g icing sugar
  • 1 tsp vanilla extract
  • 300ml double cream

To decorate (optional)

  • Fresh strawberries, raspberries or blueberries
  • Lemon zest
  • Crushed Biscoff biscuits
  • Chocolate shavings
  • Berry coulis

Equipment

  • 20cm springform cake tin
  • Food processor (or a rolling pin and a freezer bag)
  • Mixing bowls
  • Electric hand whisk (makes life much easier)
  • Spatula
  • Measuring jug

Method

Step 1: Make the biscuit base

Blitz the digestive biscuits in a food processor until they resemble fine crumbs. If you don’t have one, put the biscuits into a freezer bag, seal it and bash them with a rolling pin. It’s surprisingly therapeutic.

Mix the crumbs with the melted butter until they look like wet sand.

Tip the mixture into your cake tin and press it down firmly using the back of a spoon or the bottom of a glass. Try to make it as even as possible.

Pop it into the fridge while you make the filling.


Step 2: Make the cheesecake filling

In a large bowl, beat together the cream cheese, icing sugar and vanilla until smooth.

In a separate bowl, whip the double cream until it forms soft peaks. You don’t want it rock solid—just thick enough that it holds its shape.

Gently fold the whipped cream into the cream cheese mixture until everything is smooth, light and creamy.


Step 3: Assemble

Spoon the filling onto the chilled biscuit base.

Use a spatula or the back of a spoon to smooth the top.

Don’t worry if it’s not perfect. Homemade cheesecakes aren’t supposed to look factory-made.


Step 4: Chill

Place the cheesecake in the fridge for at least four hours.

Overnight is even better because it gives the filling time to firm up properly.


Step 5: Decorate

This is the fun bit.

Top with fresh berries, grated chocolate, crushed biscuits, lemon zest or simply leave it plain.

Sometimes less really is more.

Usually the cream hasn’t been whipped enough, or the cheesecake hasn’t chilled for long enough.

My base falls apart.
Press it down firmly before chilling and don’t skimp on the butter—it holds everything together.

Can I use low-fat cream cheese?
You can, but full-fat gives the best texture and helps the cheesecake set properly.
