How to Cook Halibut Without Fear: A Simple Summer Recipe with Jersey Royals & Butter

Fish can be intimidating — we get it. One wrong move and you’re stuck with something dry, rubbery, or just plain disappointing. But when done right, fish is light, flavourful and beautifully satisfying.

We think it’s time to change the narrative — starting with halibut, a meaty, mild white fish that’s easy to love and (surprisingly) easy to cook.

This summer-ready recipe uses just a handful of ingredients: butter, lemon, fresh herbs and seasonal Jersey Royal potatoes. It’s unfussy, delicious, and totally doable — even if you normally avoid the fish counter.


🍋 Pan-Seared Halibut with Lemon Butter & Jersey Royals

Serves 2 | Ready in 25 minutes

🛒 Ingredients:

  • 2 halibut fillets (approx. 150–180g each), skin on
  • 250g Jersey Royal potatoes, scrubbed
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 lemon, cut into wedges
  • Fresh herbs (parsley or dill work beautifully)
  • Salt & cracked black pepper

👩‍🍳 Method:

1. Boil the potatoes
Place the Jersey Royals in salted boiling water. Simmer for 15–20 minutes until tender. Drain and toss with 1 tbsp butter, a pinch of sea salt, and a scattering of chopped herbs.

2. Cook the halibut
Pat the fillets dry with kitchen paper. Season both sides with salt and pepper. Heat 1 tbsp olive oil and 1 tbsp butter in a non-stick pan over medium heat.

Place the halibut fillets skin-side down and cook without moving for around 4–5 minutes, until the skin is crisp and the flesh has turned opaque halfway up. Flip carefully and cook for another 2–3 minutes, until just cooked through.

3. Serve simply
Plate up the halibut with a wedge of lemon, spoon over the buttery pan juices, and serve with the warm Jersey Royals on the side.
