“Just when you think you’ve seen it all… you haven’t,” she says. “At first I thought it combined the flavours of lasagne and Asian dumplings, but then I realised it’s really just dumplings layered like a lasagne. It’s genius.”

Morley says the trend also reflects a broader shift in what people are cooking at home. Recipes inspired by Asian comfort food — particularly dishes featuring bold, savoury flavours like soy, ginger and chilli — have surged in popularity.

“At HelloFresh we’re seeing a massive shift towards Asian comfort food,” she says. “Recipes like sticky beef or gyozas are consistently among our most-ordered dishes. Dumpling lasagne feels like a natural evolution of that trend.”

Her solution is surprisingly simple: add a small amount of stock between the layers. Mixing chicken stock with a little gelatin can help replicate the rich, savoury broth you’d normally find inside a soup dumpling.

Another important tip is to remember that dumpling wrappers are much thinner than pasta sheets.

“Wonton and gyoza wrappers are thinner than pasta,” Morley explains. “Doubling up the layers helps create that satisfying bite you expect from a lasagne.”

The finishing touch: chilli crisp

Like many viral food trends, the finishing touches are what make the dish irresistible on camera — and on the plate.

Morley recommends adding crispy chilli oil both between the layers and as a garnish once the dish is cooked.

Not only does it add heat and flavour, but the crunchy chilli flakes also provide a welcome contrast to the soft dumpling layers beneath.

“It adds a beautiful layer of texture,” she says. “And that punchy flavour really brings the whole dish together.”

How to Make Dumpling Lasagne

If the TikTok videos have convinced you to try it, the good news is that dumpling lasagne is surprisingly simple to make at home. The idea is to recreate the flavours of a classic dumpling filling, then layer it with wonton wrappers in the same way you would pasta sheets in a traditional lasagne.

The result is a rich, comforting dish with silky dumpling layers and plenty of savoury flavour.

Ingredients (Serves 2–3)

  • 250g pork mince
  • 2 cloves garlic, finely minced
  • 1 tbsp fresh ginger, grated
  • 2 spring onions, finely sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 pack wonton wrappers (about 20–24)
  • 120ml chicken stock

  • 2–3 tbsp chilli crisp or crispy chilli oil

Method

1. Make the dumpling filling

In a bowl, combine the pork mince, garlic, ginger, spring onions, soy sauce, sesame oil, rice vinegar, oyster sauce and sugar. Mix well until the ingredients are evenly combined.

2. Prepare the stock

Warm the chicken stock slightly and stir in the gelatin powder if using. This helps recreate the rich, savoury broth you’d normally find inside soup dumplings.

3. Start layering

Lightly oil a small baking dish or ramekins.
Place a layer of wonton wrappers on the bottom, overlapping slightly.

Spread a thin layer of the pork mixture on top, then drizzle over a tablespoon of the stock mixture.

4. Repeat the layers
