Manchester’s Iconic Pan Asian Restaurant Enters a Bold New Era

Australasia, Manchester’s legendary restaurant and bar, has officially stepped into a bold new era, bringing a fresh energy to Spinningfields with an elevated dining experience.

Under the visionary leadership of Head Chef Lucie Sainerova—formerly Executive Head Chef at Novikov International and Raffles International—Australasia introduces a menu that celebrates the vibrant flavours of the Pacific Rim. Emphasizing open-flame cooking, the menu showcases the finest local produce and seasonal ingredients designed for sharing. 

  • Sushi & Raw Bar: Experience an array of innovative rolls, including the Alaskan King Crab Dragon Roll with avocado and Alphonso mango, and the Scorched Spicy Tuna & Shiso Roll with burnt goma and sweet apple gochujang. The raw bar features delicacies like Gillardeau Oysters with smoked umami vinegar and chili daikon, and Otoro Tuna Carpaccio adorned with truffle and clementine blossom.​
  • Yakitori Skewers: Skewers such as Australian Beef Wagyu with oyster sauce and burnt onion, and Argentinian Prawns complemented by coconut satay.​
  • Small Plates: Dishes like Crispy Duck on toasted milk brioche with cherry hoisin, and Lobster Popcorn served with sudachi and lime aioli.​
  • From the Grill: Premium cuts including a 250g Beef Ribeye and a 700g Tomahawk steak, both served with grilled mixed vegetables, frites, and a selection of sauces. Seafood enthusiasts can enjoy the Gochujang Miso Black Cod and Grilled Half Lobster with tarragon, lemon and black garlic butter.​
  • Large Plates: Explore hearty options like Black Pepper Beef featuring wok-seared Wagyu sirloin with fermented black bean and caramelized garlic, and Steamed Sea Bass accompanied by pineapple red curry.​
  • Desserts: Finish your meal with sweet treats such as the iconic Mango Soufflé with hot coconut cream sauce, Ginger Crème Brûlée paired with lemongrass sorbet and Churro S’mores featuring cinnamon sugar churros and torched Italian meringue.

The restaurant itself has also undergone a stunning revamp, drawing inspiration from the sun drenched shores of the Pacific. The new design creates a natural, organic sanctuary – somewhere to escape and unwind from the urban rush.

As dusk falls, evenings begin with the soft, elegant sounds of a baby grand piano, serenading early evening drinkers and diners. As the night deepens, live musicians and DJs carefully curate immersive soundscapes enhancing the atmosphere without overpowering it – an essential ingredient in the new Australasia experience.

Australasia’s bar has been reborn as a destination in its own right, offering a creative cocktail list. Drawing influence from across the Pacific Rim, the drinks menu is both imaginative and elegant. Highlights include the Banana Brûlée, a tropical mix with smoked banana foam; the Island Fern, a fresh combination of Hendrick’s gin, St-Germain, cucumber and mint; and the vibrant Aurora Reef with blue curaçao, kiwi syrup and pineapple. For a bolder choice, the Osaka Smoke blends Bulleit Bourbon with mandarin peel and Angostura bitters. Guests can also enjoy low- and no-alcohol options crafted with the same attention to detail, making the bar a standout experience whether you’re dining or simply drinking.
