ETXEKO IBIZA BY MARTIN BERASATEGUI UNVEILS NEW CHEF AND SEASONAL TASTING MENU
One of just three Michelin star restaurants on the island, Etxeko Ibiza by Martín Berasategui at BLESS Hotel Ibiza welcomed back Spain’s most celebrated chef to present this season’s new tasting menus. Inspired by nature and the Ibizan Sea, the menus take diners on a gastronomic journey of Mediterranean tradition and innovation. Etxeko, which means “homemade” pays tribute to both Berasategui’s Cantabrian origins and to the local produce from the White Isle itself.
This season, two tasting menus are available for the first time: the Origen (150 euros) and the Grand Etxeko (175 euros). Standout dishes include oysters with wasabi emulsion; tail cannelloni with acorn-fed Iberian cured ham; and Grilled Sea bass with scallop tarama and potato pureé. The new menus will be overseen by new executive chef Esteban Sánchez, who trained with Berasategui himself.

First, Wine, formerly an à la carte wine and tapas restaurant, has been reimagined to serve hearty Mediterranean meals paired with local vintages. The change allows guests to customise their main course to their liking, choosing their protein, garnish and sauce, as well as choosing preset starters and desserts.
Elsewhere, the show-cooking restaurants of La Sal and Su Prunera now source more local produce than ever before.
