Searches for “healthy pancake recipes” were also up 180%, with “almond flour pancakes” increasing by 160% and “healthy pancakes” up 80%. According to nutritionists, the trend reflects a wider shift towards balanced eating rather than one-off indulgence.
“Pancake Day has traditionally been about indulgence and using up ingredients before Lent,” says Sarah Fancourt, Lead Nutritionist at Gousto. “But many people are now well into their New Year health kicks and don’t want to feel like one day of sugar-heavy food knocks them off track. That’s why we’re seeing more interest in pancakes that feel lighter, more balanced and easier to enjoy as part of everyday eating.”

“Pancakes made with higher-protein ingredients tend to be more filling,” Sarah explains. “That’s why people are now looking for recipes they can enjoy beyond Pancake Day, whether for breakfast or as a lighter meal option.”
Search interest in protein pancakes and low-calorie pancake recipes has also increased, highlighting demand for pancakes that offer more staying power than traditional white flour versions.
