Thirsty Thursday Cocktails – Agnes Collins

An exciting and refreshing cocktail, dedicated to Agnes Arber, the Agnes Collins is a drink infused with nine pot-stilled botanicals as a tribute to a female pioneer in the study of botanical history and plant anatomy.
- 60ml Agnes Arber Gin
- 40ml Pink Grapefruit
- 20ml Lemon Juice
- 20ml Sugar Syrup
- 4 Blades of Tarragon
Shake all ingredients with ice and double strain into a Collins glass. Garnish with tarragon sprigs or thyme, raspberry and a lemon wheel.

Meet your new favourite cocktail. Between an impressive array of fresh herbs and a delicate hint of lemon, the Windsor Garden is like sipping on spring.
- 60 ml Empress 1908 Gin
- 15ml Fresh Lemon Juice
- 15ml Simple Syrup
- Basil, Thyme and Mint Leaves
Shake ingredients on ice, strain into a stemless wine glass with ice. Garnish with a sprig of rosemary.

- 25ml Old J Cherry Spiced Rum
- Pineapple Soda
Add Old J Cherry Spiced Rum to the glass and top with pineapple sofa. Serve over ice and garnish with citrus or raspberries for that extra fruit infusion.
