Thirsty Thursday Cocktails – Frozen Bramble Margarita Lollies
Frozen cocktails are a must-have during summer months, but we are elevating this trend to new, playful levels with the creation of these beautiful, thirst-quenching lollies.
- 15ml bottlegreen bramble cordial
- 60ml tequila
- 25ml lime juice
- 10ml agave
- 1 cup water
Combine bottlegreen bramble cordial, tequila, agave, lime juice into a shaker and top with one cup of water. Shake vigorously and pour the contents into an ice lolly mould, leave a 1cm gap. Add fresh blackberries into the mix, leave in the freezer until set and serve immediately.
Tip: For a non-alcoholic alternative, swap the tequila for Mockingbird (alcohol-free) or replace with white grape, apple or even watermelon juice.
Thirsty Thursday Cocktails – Blackberry & Basil Mojito
A unique twist on one of the nation’s favourite cocktails! The complementary sweetness of the blackberry and aromatic basil creates a perfect balance of flavours. This recipe can be made as a single serving or as a pitcher to be enjoyed with you closest 6 friends and family for the perfect alfresco soiree.
- 50ml White Rum
- 20ml bottlegreen bramble codial
- 25ml lime juice
- 3 fresh blackberries
- 6 basil leaves
Combine bottlegreen bramble cordial, lime juice and three fresh blackberries. Add basil leaves and muddle together to release the aromatic flavours. Add rum and stir gently. Fill glass with crushed ice, top with soda and stir. Add more crushed ice to top, and garnish with fresh basil.
Thirsty Thursday Cocktails – Ginger and Lemongrass Cheesecake
- Make the Cheesecake Mix:
- 60g Cream Cheese
- 180g Vanilla Ice Cream
- 3 tbsp bottlegreen Ginger and Lemongrass Cordial
- 6 Ginger Nut Biscuits
- Lemon Wedge
- Fresh Ginger
- Fresh Lemongrass
Make the Cheesecake Mix:
- Combine the cream cheese, ice cream and bottlegreen Ginger & Lemongrass Cordial in a food processor or blender and blitz until smooth.
Assemble the drink:
1. Crush two ginger nuts into a powdery consistency. Rub a lemon wedge around the rim of your serving glasses to moisten the rim. Press the rim into the ginger nut crumb.
- Serve the drinks over ice and garnish with fresh ginger and lemongrass.
