This Easter, healthy food brand Mindful Chef is offering a menu of limited-run dishes that highlight the very best of seasonal, British produce.
From succulent strands of salty samphire, to sustainably sourced fish and tender Spring lamb, Mindful Chef sets the table for a mouth-watering Easter feast with a signature healthy twist. As ever, all recipes are nutritionally balanced and designed to nourish from the inside out; free from refined carbs, gluten and dairy, and with no additives.
To celebrate the first Easter where loved ones can gather indoors since 2019, Mindful Chef is taking all the stress out of cooking Easter feasts, making way for valuable quality time together. All ready in 45 mins or less, Mindful Chef’s healthy yet delicious Easter feasts cater for the whole Easter weekend and are available to enjoy in one, two and four-person portions. The pre-portioned recipe boxes avoid food waste, allowing for a mindful approach to the feasting occasion.
For those looking to honour the Good Friday tradition of a fish supper, Mindful Chef has worked with MSC certified Leap and Fish Said Fred to bring fresh and sustainable options to the menu including Wild-caught Lemon Baked Cod with Seaside-fresh Samphire and Buttery Baked Lemon Sole with Charred Lettuce. For Easter Sunday, tuck into a true classic: Tender British New Season Lamb Served with Smoky Mint Chimichurri and Pea Salad, as well as a sharing platter of British Steak Served with Herby Roast Potatoes and Vegetables. In keeping with Mindful Chef’s inclusive ethos, plant-based options will also be on offer and include a show-stopping centrepiece of Whole Roasted Cauli ‘cheese’ Roast and Trimmings and a Smoky Tofu Stew with Rosemary Potatoes. For most, Easter isn’t complete without some chocolate to enjoy – Mindful Chef’s Chocolate and Coconut Torte and Raspberry Beetroot Brownie are available to purchase through the Mindful Chef store for a healthier take on indulgent desserts following the Easter feast.
