I recently visited America (namely Vegas) for only the second time in my life, and the one thing that piques my interest about the USA more than anything is the food — not really in the way that India or Thailand might fascinate me, but because I’ve watched so much American TV and seen so much of the food culture on screen. It’s food we recognise here in the UK, but somehow it’s on a whole new level over there — bigger, bolder, and unapologetically indulgent. And while the burrito may have its roots in Mexico, it’s become an American staple that’s taken on a life of its own.

I had never actually tried a burrito — even though I’ve visited Mexico numerous times, it never seemed to feature there quite as much as it does in America. So, to avoid the extortionate cost of breakfast in our Vegas hotel, we ventured out to see what was good just off the Strip.

Breakfast in the States is a curious subject for me. Venture out for breakfast in the UK and you’ll usually find a fairly concise offering — the Full English, a bacon sarnie, or if you’re somewhere fancy, maybe a bit of smoked salmon. In the US, it’s much more… well, much more! The breakfast burrito is a perfect example of that — hearty, stuffed to bursting, and often loaded with enough flavour (and calories) to see you through until dinner.

So my first dalliance with the burrito was of the breakfast variety — and that’s exactly where we’ll start. There’s something undeniably satisfying about wrapping up your morning fry-up essentials into a warm tortilla. Eggs, cheese, maybe a little sausage or hash brown — it’s the kind of all-in-one breakfast that makes perfect sense once you’ve tried it.


1. The Breakfast Burrito

My first experience of a burrito was a breakfast one — and honestly, it set the bar high. There’s something wonderfully indulgent about wrapping up everything you’d usually see on a plate into one warm, handheld bundle. It’s part fry-up, part hangover cure, and completely addictive.

You’ll need:

  • 2 spicy sausages (chorizo-style or your favourite breakfast sausages)
  • 3 eggs
  • 1 small potato, peeled and diced
  • ½ onion, finely chopped
  • A handful of grated cheese (cheddar or Monterey Jack work well)
  • 1 large flour tortilla
  • A splash of milk or cream (for softer eggs)
  • Salt, pepper, and a little oil or butter for cooking

How to make it:

  1. Cook the potatoes first. Heat a little oil in a frying pan and fry the diced potato until golden and crisp. Set aside.
  2. Add the sausage. Slice it up and cook until browned and slightly crisp around the edges. Remove and keep warm.
  3. In the same pan, sauté the onions until soft and just starting to caramelise.
  4. Scramble the eggs. Beat them with a splash of milk, season with salt and pepper, and cook gently until just set — still glossy and soft.
  5. Warm your tortilla in a dry pan or microwave for a few seconds so it’s pliable.
  6. Assemble the burrito. Layer the eggs, potatoes, sausage, onions, and cheese down the middle, then wrap it all up — fold the sides in, roll it tightly, and toast the seam side down in the pan until golden.

Serve it hot, ideally with a dollop of salsa or a splash of hot sauce if you’re brave. It’s filling, spicy, and everything breakfast should be — no cutlery required.

Swap idea: Try swapping the sausage for a spicy vegetarian alternative — something like a plant-based chorizo or veggie sausage works brilliantly and keeps all the flavour without the meat.


2. The Chicken Verde Burrito

If the breakfast burrito is comfort food in a wrap, the chicken verde burrito is its fresh, zingy cousin. Packed with shredded chicken, tangy tomatillo salsa and a hit of lime, it’s one of those burritos that tastes like sunshine — messy, bright, and full of flavour.

You’ll need:

  • 1 cooked chicken breast, shredded
  • ½ cup green salsa (salsa verde or tomatillo sauce)
  • ½ cup cooked rice
  • ¼ cup black beans (optional)
  • A handful of grated cheese
  • A few coriander leaves
  • 1 large flour tortilla
  • A squeeze of lime

How to make it:

  1. Warm the chicken in a pan with the salsa verde until everything’s coated and hot through.
  2. Warm the rice and beans together if using.

If there’s one burrito that feels like the archetype, it’s the classic beef version — spicy mince, melted cheese, beans and rice all tucked into one glorious wrap. It’s rich, comforting, and the kind of food that tastes even better after a long day.

You’ll need:

  • 250g beef mince
  • ½ onion, diced
  • 1 garlic clove, minced
  • 1 tsp chilli powder
  • ½ tsp cumin
  • ¼ tsp smoked paprika
  • ½ cup cooked rice
  • ¼ cup black beans
  • A handful of grated cheese
  • 1 large flour tortilla
  • Salt, pepper, and a little oil

How to make it:

  1. Heat the oil in a pan, then cook the onion and garlic until soft.
  2. Add the beef mince and brown it thoroughly.
  3. Stir in the spices, salt, and pepper, then add a splash of water to make it saucy.
  4. Warm the rice and beans, then layer everything down the centre of the tortilla with cheese on top.
  5. Roll and toast until crisp on the outside and melted inside.

Tip: Add a spoon of sour cream or guacamole before rolling for that restaurant-style finish.


4. The Roasted Vegetable Burrito

This one’s proof that a meat-free burrito can be every bit as satisfying. It’s smoky, colourful, and a great way to use up whatever veg you’ve got lurking in the fridge — just roast, wrap, and go.

You’ll need:

  • ½ courgette, sliced
  • ½ red pepper, chopped
  • ½ red onion, sliced
  • A few cherry tomatoes, halved
  • Olive oil, salt, pepper, and a pinch of smoked paprika
  • ½ cup cooked rice or quinoa
  • A handful of cheese or vegan alternative
  • 1 large flour tortilla

How to make it:

  1. Toss the veg in olive oil, seasoning, and paprika. Roast at 200°C for around 20 minutes until soft and caramelised.
  2. Warm the rice or quinoa.
  3. Pile the roasted veg and rice onto your tortilla, sprinkle over cheese, and roll up.
  4. Toast lightly to seal and serve with a spoon of yoghurt or salsa.

Tip: Add a smear of hummus or guacamole before rolling for extra creaminess.


5. The Spicy Prawn & Mango Salsa Burrito

This one’s pure sunshine in a wrap — sweet, spicy, and just the right side of unexpected. It’s the kind of burrito you’d want to eat outside, ideally with a cold drink in hand and absolutely nowhere to be in a hurry.

You’ll need:

  • 150g prawns (raw or cooked)
  • ½ tsp chilli flakes
  • Juice of ½ lime
  • ½ mango, diced
  • ¼ red onion, finely chopped
  • A few coriander leaves, chopped
  • ½ avocado, diced
  • 1 large flour tortilla
  • A little oil, salt, and pepper

How to make it:

  1. Mix the mango, red onion, avocado, lime juice, and coriander in a bowl — that’s your salsa.
  2. Heat a drizzle of oil in a pan, add prawns, chilli flakes, salt and pepper, and cook for 2–3 minutes until pink and slightly crisp.
  3. Warm the tortilla, pile in the prawns, top with salsa, and wrap it up.
  4. Serve straight away with extra lime wedges.

Tip: If you want to make it a little heartier, add a spoonful of coconut rice — it pairs perfectly with the sweet-spicy flavours.
